I have two well seasoned 6-inch cast iron skillets to make single serving portions. My dear wife says, “This tastes like cheating. You could serve it for dessert.” Not a bad idea! But I serve it for breakfast.

INGREDIENTS
2 tsp Butter, or margarine, or vegetable oil
1 whole egg
3 egg whites, whipped frothy
2 Tbsp maple syrup
1 small apple, cored and sliced thin
1/2 tsp ground cinnamon, to taste.
2 Tbsp low-fat plain yogurt
DIRECTIONS
- Preheat broiler.
- Whisk together egg and egg whites and maple syrup in a large bowl.
- Over a medium-high burner, heat a well seasoned cast iron skillet (or other small pan) and melt the butter or margarine. When pan is hot, add egg mixture and cook until mostly set but still runny on the surface, about 5 to 6 minutes. (Note: Using a spatula, frequently lift the mixture from the sides of pan to allow uncooked eggs to run to the bottom.)
- When nearly set, but still runny on the top, set in the apple slices and sprinkle with cinnamon.
- Place skillet under broiler until apples on top are tender, about 1 to 2 minutes. Slice into 2 pieces and serve.
- Top each serving with a tablespoon of yogurt.
