
baked stuffed potato with ham and cheese (5 point)
The potato is one food that is so filling and low in calories, but stuffed with good things. For a great run down on the potato, check it out at the World’s Healthiest Foods. Instead of piling on fatty butter or bacon, we use lean fat-free sour cream and fat-free cheddar cheese and lean deli ham.
Yield: 4 servings 1 potato each.

Ingredients
4 baking potatoes, (8 ounces each)
1/3 cup fat-free sour cream
1/4 teaspoon salt
1/8 teaspoon black pepper
1 cup lean deli ham, diced
1 cup shredded fat-free cheddar cheese
fresh chives, chopped
Directions
- Preheat the oven to 400°F. Line a baking sheet with foil.
- With a fork, prick the potatoes in several places. Place on the baking sheet and bake until fork-tender, about 50 minutes.
- Wearing oven mitts, cut off and discard a thin slice from each potato. Scoop out the potato flesh, leaving a ¼-inch wall. Transfer the flesh to a medium bowl and mash with the sour cream, salt and pepper. Spoon the filling evenly back into the potato shells. Top potatoes evenly with the ham and cheese.
- Preheat the broiler. Return the potatoes to the baking sheet and broil until the cheese is melted, about 3 minutes. Sprinkle evenly with chives.
