cheesy hash browns, reduced fat (3 points)

Here is a quick, easy recipe that your teens can make or you can make and it won’t take a lot of your valuable morning time. Since it takes about 1 hour and 20 minutes total time, it can be made ahead the night before and warmed up in the morning.

INGREDIENTS

HASH BROWNS

2 medium russet potatoes, unpeeled, grated, about 1 pound
½ cups onion, chopped
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon pepper

HAM AND CHEESE MIXTURE

4 cups fat free shredded cheddar
½ pound turkey ham, cubed

EGG TOPPING

1 cup fat-free milk
½ teaspoon ground mustard
½ teaspoon salt
6 egg whites

DIRECTIONS

  1. Grate the potatoes with the skins on. Pat dry with a paper towel.
  2. Put the olive oil into a non-stick or well cured skillet over medium high heat. Add the onions and cook until they are nicely caramelized and browned
  3. Add the potatoes, salt, and pepper and cook until the potatoes are browned and tender.
  4. Spread the hash browns in a single layer in a greased 9×13 pan.
  5. Sprinkle with fat-free cheese and turkey ham.
  6. In a bowl, beat eggs, egg whites, milk, salt and mustard.
  7. Pour mixture over ham and cheese.
  8. Cover and bake at 350°F for 1 hour.
  9. Uncover and bake 15 minutes longer or until edges are golden brown and knife inserted near center comes out clean.

I like to use McCormick Montreal Steak Seasoning instead of just salt and pepper. It adds a garlic flavor to the potatoes.
