goodwife farm's chicken corn chowder (4 points)

Sarah, a  friend from the Weight Watcher’s blog whose handle is “goodwifefarm,” sent me this. Haven’t tried it yet but others have and swear it’s good. The recipe looks good to me! (The image is from Google Images until I get my own picture.)

INGREDIENTS

1/2 cup onions, thinly sliced
1 cup potatoes, diced
1/2 cup carrots, thinly sliced
1 chicken bouillon cube
1 tsp canola oil
2 oz Chicken breast, skinless, boneless, raw, cubed
1 tsp minced garlic
1/2 cup cream-style corn
1 Tbsp cornstarch

DIRECTIONS

  1. Wash and dice potatoes, but do not peel. Boil potatoes, til done, drain. Combine potatoes, onion, thinly sliced carrots, bouillon cube and one cup water in medium saucepan. Bring to boil and simmer till carrots are tender.
  2. Meanwhile, add heat canola oil in small cast iron skillet Add chicken breast and minced garlic, saute till chicken is done. Add creamed corn and chicken breast to vegetables in saucepan, heat through. Mix 1 TBSP cornstarch with 1/4 cup cold water, add to chowder to thicken.

Makes two 1 cup servings (4 points ea) or 1 large (8 point) serving.
