My son just loves McDonald’s® Sausage McGriddles®. I hate the price of them and the idea that I have no clue what they are feeding him. Weight Watchers or not, I ate some of one to see what they taste like. Not my cup of tea, but not horrible either. So I set out to make them myself. They really are just a sort of waffle, but not having an iron that makes round waffles that small, I had to do something a little different.

For this recipe, you will need one piece of special equipment: an egg ring. You can Goole egg cooking ring. I think you can find them at Bed, Bath, and Beyond. I got mine at an old dusty general store somewhere in the Southwest.

INGREDIENTS

Cooking Spray
2 cups Original Bisquick Mix
1 cup fat-free milk
2 eggs
2 Tbsp maple syrup, or sugar
1 tsp baking powder
1 tsp vanilla extract
5 tsp maple syrup

DIRECTIONS

  1. Spray a non-stick or well cured griddle and two egg cooking rings with cooking spray. Heat the griddle and the rings over medium high heat.
  2. Stir the next six ingredients together until well blended. It doesn’t have to be perfectly smooth. Let stand for a couple of minutes.
  3. Pour less than 1/4 cup of the batter into the cooking ring. Pour about 1/2 tsp maple syrup on the top of the batter. It will sink in.
  4. Cook until the top is covered with bubble holes and you can move the ring without the cake sticking or draining down. (This may take a little practice but once you get it right you will know.) About a minute. The cake will rise to the top if the ring. Remove the ring. Flip the cake and bake for another minute or so, until done.
  5. Remove the cake from the griddle and let cool, or use on a sandwich immediately. If you are not using all the cake right away, cook the whole batch and carefully freeze the unused cakes. When you want to use them they can be reheated in the microwave or a toaster oven.

NOTES

  • The cooking ring can be used to make the egg for your sandwich.
  • I used a serving of Jimmy Dean Sausage and reshaped it using the cooking ring then cooked it on the griddle for Sausage Griddle Cakes.
  • Canadian bacon works well, too.
  • They make really thick rich beautiful pancakes in their own right too.
