INGREDIENTS

8 ounces sweet potatoes, peeled, three small potatoes
1 tablespoon light honey mustard dressing, (such as Ken’s Steakhouse)
½ tablespoon light stick butter, melted
cooking spray

DIRECTIONS

  1. Prepare the grill. Before you light the fire, coat the grill rack with cooking spray.
  2. Cut each sweet potato lengthwise into 4 slices. Arrange potato slices in a single layer on a large microwave-safe dish. Microwave on HIGH for 5 minutes or until just tender.
  3. While potatoes cook, combine honey mustard dressing and melted butted in a small bowl. Brush potatoes with half of honey-mustard mixture. Place potato slices on grill rack coated with cooking spray. Grill potato slices 8 to 10 minutes, turning after 4 minutes and brushing with remaining honey-mustard mixture.
