INGREDIENTS
8 ounces sweet potatoes, peeled, three small potatoes
1 tablespoon light honey mustard dressing, (such as Ken’s Steakhouse)
½ tablespoon light stick butter, melted
cooking spray
DIRECTIONS
- Prepare the grill. Before you light the fire, coat the grill rack with cooking spray.
- Cut each sweet potato lengthwise into 4 slices. Arrange potato slices in a single layer on a large microwave-safe dish. Microwave on HIGH for 5 minutes or until just tender.
- While potatoes cook, combine honey mustard dressing and melted butted in a small bowl. Brush potatoes with half of honey-mustard mixture. Place potato slices on grill rack coated with cooking spray. Grill potato slices 8 to 10 minutes, turning after 4 minutes and brushing with remaining honey-mustard mixture.
