This is a really hearty soup you might like to serve during the winter. The barley may thicken it up and if it gets too thick, just add a little water.

INGREDIENTS
½ lb. uncooked ground turkey breast
½ cup onion, chopped
1 clove garlic clove, minced
8 cups fat-free beef broth
14 ½ ounces canned tomatoes
½ cup uncooked barley
½ cup celery, sliced
½ cup carrot, sliced
½ teaspoon dried oregano
1 bay leaf
¼ teaspoon table salt, to taste
1/8 teaspoon black pepper, to taste
9 ounces frozen mixed vegetables
DIRECTIONS
- Brown the turkey. Add onion and garlic and cook until onion is tender. Drain.
- Stir in remaining ingredients except frozen vegetables. Cover and bring to a boil. Reduce heat and simmer fro 50- 60 minutes.
- Add vegetables and cook for ten minutes more or until the vegetables are tender.
