This is a really hearty soup you might like to serve during the winter. The barley may thicken it up and if it gets too thick, just add a little water.

INGREDIENTS

½ lb. uncooked ground turkey breast
½ cup onion, chopped
1 clove garlic clove, minced
8 cups fat-free beef broth
14 ½ ounces canned tomatoes
½ cup uncooked barley
½ cup celery, sliced
½ cup carrot, sliced
½ teaspoon dried oregano
1 bay leaf
¼ teaspoon table salt, to taste
1/8  teaspoon black pepper, to taste
9 ounces frozen mixed vegetables

DIRECTIONS

  1. Brown the turkey. Add onion and garlic and cook until onion is tender. Drain.
  2. Stir in remaining ingredients except frozen vegetables. Cover and bring to a boil. Reduce heat and simmer fro 50- 60 minutes.
  3. Add vegetables and cook for ten minutes more or until the vegetables are tender.
