veggie tofu scramble

Yesterday, I kind of joked around and posted a really bad for you but delicious breakfast like what I would have have “back in the day.” That is back when I was fat and killing myself with food. Toady, in honor of the end of National Breakfast Month, I will post what is a more typical breakfast for me.

A 3 egg white omelette stuffed with spinach, grape tomatoes, and fat free feta
1 Arnold’s Sandwich thin
1 cup milk (Not a tumbler, but one of those on-the-rocks glasses)
1 banana
3 slices turkey bacon cooked crisp.

Sometimes I put strawberries and blue berries into the omelette. Here’s another:

3/4 cup oatmeal with brown sugar and 1 Tablespoon evaporated skim milk
1 apple
1 cup milk

When I am on the run, I like a smoothie:

1 cup strawberries
1/4 cup blueberries
1 small banana
1/2 cup fat free vanilla yogurt
1/2 cup fat free plain yogurt
2 egg whites
Throw them in the Magic Bullet til blended.

I have also discovered some new foods – Morningstar Farms Veggie sausages, links or patties. Don’t do the “bacon,” it is inedible. I have also had scrambled tofu. I now make my own turkey breakfast sausage. Sometimes I switch off the oatmeal with barley, a whole grain mix I got at Trader Joe’s, even rice.

I never overeat for breakfast. I always save a little room for a fruit bar or piece of fruit around 10:00 then lunch at noon.

I never skip breakfast.

And Tums is not a food group.

Here is the veggie tofu scramble:

Ingredients:

  • 1/2 yellow onion, diced
  • 1/2 green bell pepper, diced
  • 1 block tofu, drained and pressed
  • 2 tbsp oil or margarine
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried parsley
  • 1 tbsp soy sauce
  • 2 tbsp nutritional yeast
  • 1/2 tsp turmeric (optional)

Preparation:

Slice the tofu into approximately one inch cubes. Then, using either your hands or a fork, crumble it slightly.

Sautee onion, pepper and crumbled tofu in oil for 3-5 minutes, stirring often. Add remaining ingredients, reduce heat to medium and allow to cook 5-7 more minutes, stirring frequently and adding more oil if needed.

Serves two.
