
rosemary-garlic pork tenderloin (3 points)
Fragrant rosemary and garlic enhance a simple pork tenderloin. This herb paste also works well on chicken.

INGREDIENTS
¼ cup fresh rosemary, minced
¼ cup garlic, minced (about 10 cloves)
1 tablespoon olive oil
2 teaspoons kosher salt
1 teaspoon black pepper, freshly ground
2 pounds pork tenderloin, trimmed
METHOD
- Combine first 5 ingredients in a small bowl, mixing well to make a paste.
- Make several 1-inch slits in the pork, and stuff each slit with 1 teaspoon rosemary paste. Spread any remaining rosemary paste onto top and sides of pork. Cover and chill for 2 hours.
- Prepare grill.
- Place pork on grill rack coated with cooking spray. Grill pork 23 minutes or until thermometer read 155°F, turning once. Remove pork from grill; cover and let stand for 15 minutes.
Note: While pork stands, its internal temperature should reach 160°F.
